Perfect Potatoes

It has been over a month now since we planted our potatoes on the farm.  With all the rain and sun we've had little shoots began to poke their heads through to the surface.  It only took about five weeks before a healthy amount of green foliage could be seen.

Now comes a trick - time to bury the shoots with more soil!

For many people who have never grown potatoes before, this can seem absurd, but it is a great way to encourage more potatoes to grow.

As the shoots continue to push through the earth, they will branch out beneath the soil allowing more potatoes to develop.  I will keep doing this for the next five weeks, or when there is no more room for me to pile on soil (whichever comes first) and at harvest time the ground will be bubbling with potatoes!!!  Well ... that's the plan anyway.  Hopefully there will be so many, we can share the abundance with our customers, as we always strive to do.
